What's For Dinner

I love making my weekly menu off of Pinterest. It's fun to try some new stuff and not just have the same.old.thing.again.

Here's what I've made in the last week:

Tonight (WednesdayCrispy Oven Parmesan Chicken


This was good. Mine didn't look as crispy though. The pieces ended up HUGE. It called for way more dry ingredients than I actually ended up using. THIS is the leftovers.


I say cut the flour down to about 1/2 a cup and only use about 1/2 of the Panko, Corn Flakes and Parm Cheese. Yes, I made a recipe with Corn Flakes. My husband thought it was really good.

I subtracted out a cup of flour and a portion of the Panko and Corn Flakes to come up with 327 calories per piece. I only ate half of one, that was plenty!

Last night (Tuesday) I had a roast beef sandwich and about 5 onion rings from the corner store. Oh yeah those onion rings were a BAD idea. Sat like a oily ship in my gut for the rest of the night. Guesstimated 633 calories for it all.

Monday was Labor Day and we had tacos. I was going to make this mexican pizza but I decided it was too many calories with the only larger tortillas I had.


I came up with 587 calories for the 3.

Sunday Cheeseburger Wraps


Mine looked nothing like theirs. They must have used huge tortillas. Mine were more like little burritos. I used ground turkey. I didn't have any of the lower calorie tortillas left so the flour tortillas were higher calorie. I was panicking when I was making these thinking everyone was going to starve. I should have doubled or tripled the recipe for 5 of us. It said to add what you would put on your hamburger but there wasn't really any room after I put the meat and cheese in the tortilla and then I was thinking warm lettuce, tomatoes and pickles would be pretty gross. I just stuck mine in the oven to melt the cheese. 305 calories each.

Saturday Chicken Picatta

The most exciting thing about this recipe? Trying to find capers in the store. I've never had capers before. First I looked by the olives but didn't see them anywhere. Condiments? No. Someone on Facebook said try by the tuna. No. Then someone else said by the pickles and there they were (right down from the olives, I was close!)


This had a very unique flavor very different than what I usually cook. But it was good! Mine wasn't all pretty yellow like hers though (maybe because I used a cast iron skillet?).  Mine came out to 249 calories per serving.

Thursday Chicken and White Bean Enchiladas with Creamy Salsa Verde


This is the 2nd time I've made these. They are great the next day too! Mine came out to 153 calories each.

Wednesday Sun Dried Tomato & Basil Chicken Fettuccine


I thought I was going to have left overs of this for lunches but NOPE everyone ate it! Approximately 298 calories per serving.

I love capers and use them a lot.
I like 'em with chicken and pork. Salty and lemony to me.

Yum! I love planning out my menu for the week. I do a CSA so it is extremely helpful when trying to get all those veggies eaten. :) Did you have sweet potatoes with the chicken? I am still working my way into liking them. It is one of the very few veggies I am not crazy about. BTW - site fixed on my end. Finally!

Yum!! Tuesday and Wednesday looked off the charts amazing!! I wish we lived closer.....hee hee!
